Which wine to pair with a Bacon Cheeseburger?
A burger is a burger is a burger, right?
Not exactly.
While all burgers may start with a nice patty of Alberta Prime, it's what you add to the base that influences which wine you should choose.
Take the delicious bacon cheeseburger shown above. In addition to the beef, the layers of cheese and bacon add substanial fat to the finished product -- which means you will need to lots of tannins in your wine to cut through that fat. Select a nicely-aged En Primeur Winery Series Cabernet Sauvignon or Cabernet-Shiraz from your personal cellar. Or, open a bottle of Cru Select Cabernet-Syrah-Zinfandel.
It follows that if you remove the cheese and bacon, you remove fat -- and you can select a red wine that's less tannic, less in-your-face. Grab a corkscrew and a bottle of Cru Select Merlot, Nebbiolo or Valpola.
Then, there's the question: How do BBQ rubs or sauces affect your choice of wine?
A good question, with no simple answer because there are huge variations in rubs and BBQ sauces.
However, if we presume that ...
Rubs tend to be spicy, the Shiraz would be a good choice (or, any other red with spicy/peppery notes).
Sauces tend to be sweet, then you'll need a wine with a hint of sweetness. An En Primeur Winery Series Red Winemaker's Trio, for instance, or perhaps  an off-dry white like a Riesling or Gewurztraminer.
Finally, which wine does choose to pair with a healthy tofu burger. Sorry, but I do not have the faintest idea!
